SMALL GRAIN, BIG EFFECT
BE IT IN THE SHAPE OF PAELLA, RISOTTO, OR SUSHI – more than half of the world’s population have it on their menu daily or at least regularly. Apart from its great variety and the richness in culinary possibilities, this small grain has many health aspects in its favour: rice is low in fat and has no cholesterol – the best prerequisites for a health-promoting diet. Additionally, rice has no allergens, making it very versatile. Rice soap, rice flour, and rice water provide numerous possibilities for applications in natural cosmetics, whether it is for brittle hair or blemished skin – rice can work wonders.
Dr Malte Rubach has engaged himself in topics surrounding nutrition, health, and sustainability for over 15 years. After his research work at the Leipzig Institute, he worked as a project manager at the Bavarian Centre of Excellence for Nutrition before changing to the regional Ministry for Nutrition and Agriculture.
